Introduction
I felt like making pizza, had leftover grilled chicken to use, and was excited to find this low-carb baking mix! The flavors are outstanding, and the generous amount of fiber makes this pizza a low-net carb, healthy winner! Ingredients

1.5 cups of CARBQUICK baking mix
1/3 cup hot water
1/4 cup of CHRISTOPHER RANCH pesto sauce
1/2 cup of shredded mozzarella cheese (part skim)
4 oz cooked, cubed or shredded chicken
chopped basil
2 TBSP chopped red bell pepper
2 TBSP of thinly sliced red onion
2 tsp olive oil for the bottom of the pizza pan
sprinkling of Italian seasoning
Tips
You could use fat free or reduced fat cheese to lower the calories and fat in this recipe!
Directions
Add the 1/3 cup of hot water to the 1 and 1/2 cups of CARBQUICK baking mix, kneading until the dough forms a ball and is no longer sticky. Spread the bottom of the pizza pan with the 2 tsp of olive oil, and sprinkle with some italian seasoning. Shape the dough along the bottom of the pan. Top the dough with the 1/4 cup of pesto sauce, the mozzarella cheese, the cooked cubed chicken, and follow with the basil, red bell pepper, and onion. Bake on a low rack in a 450* oven for 15 minutes, or until crust is golden and cheese is bubbly. I calculated for this pizza to be cut into four pieces, each a serving, but you could make the slices smaller!
