Ingredients

    1 banana
    2 eggs
    1 tsp vanilla
    1/4 tsp cinnamon
    dash salt
    1 tsp coconut oil

Tips

USE SOME KIND OF OIL TO FRY. These are very crepe-y and finicky to flip if your pan isn't greased in some way, unless you've got a brilliantly seasoned cast iron fry pan.


Directions

mash banana, add eggs and beat with whisk until smooth. Add salt and cinnamon and vanilla and mix well.

Divide coconut oil into 3 equal parts. Before each pancake, melt a portion of coconut oil into the pan. Pour batter into melted oil; check occasionally after 3 minutes for color. Flip and cook on other side.
