Ingredients

4 cups chopped potatoes, sweet potatoes, butternut squash, carrots, and/or onions.
Directions
Makes 4 servings!
*Remember that potatoes, sweet potatoes, and squash are STARCHES.
*Carrots and onions are VEGETABLES.
-Preheat oven to 400 degrees.
-Spray baking sheet with cooking spray.
-Combine veggies with seasoning mix (see below).
-Place veggies in a single layer on the baking sheet.
-Roast for 15 minutes in the oven.
-Remove sheet from oven, and spray the tops of the vegetables with cooking spray.
-Flip each vegetable, and cook for another 15 minutes.
Seasonings:
Italian seasoning:
2 tsp dried basil
1 tsp dried oregano
2 tsp dried rosemary
1/4 tsp salt
1/4 tsp pepper
1/4 cup chopped fresh parsley
Mexican seasoning:
2 tsp cumin
1 tsp basil
1 tsp rosemary
1/4 tsp salt
1/4 tsp pepper
1/4 cup chopped cilantro
Indian seasoning:
1 tsp curry powder
1 tsp garam masala
1/4 tsp salt
1/4 tsp pepper
1/4 cup chopped cilantro
Spicy seasoning:
1/4 tsp salt
1/4 tsp pepper
1/4 tsp onion powder
1/4 tsp garlic powder
1/2 tsp chili powder
