Introduction

Ingredients

    Meatballs:

    1 lb lean ground turkey
    10 oz frozen chopped spinach, thawed and drained
    2 slices whole wheat bread
    1 large egg
    1 clove garlic, minced
    2 tbsp fresh parsley
    1/2 cup Parmesan Cheese
    salt and pepper

    Tomato Sauce:

    1 tbsp olive oil
    4 cloves garlic, minced
    1 28 oz can plum tomatoes
    1 onion, chopped
    1 tbsp fresh basil
    1 tbsp fresh rosemary
    salt and pepper

Tips

If planning on freezing the meatballs, cook in oven according to directions, then freeze on sheet in one layer without adding to the sauce. Once frozen, move meatballs to freezer bag. When heating up frozen meatballs, just add desired number of meatballs to pot of sauce and simmer about 20 minutes or until warmed through.


Directions

1. Heat oven to 450.
2. Wet bread with water then mash up with your hands. Add to large bowl and combine with ground turkey, chopped spinach, egg, garlic, parsley, grated cheese, salt and pepper.
3. Mix all ingredients well until thoroughly combined. Using a 1/4 cup measuring cup, measure meat, then divide in two so that each meatball is 1/8th of a cup. Roll into little meatballs.
4. Spray a cookie sheet with cooking spray. Place meatballs on tray and place in oven. Cook for 15-20 minutes or until cooked all the way through.
5. In a large pot, add olive oil and heat on medium. When hot add onion. When onion is translucent, add garlic and herbs and cook for 5 minutes. Add tomatoes, onion, salt and pepper and cover, reduce heat to low and simmer for 15 minutes.
6. Use stick blender and blend in pot, or remove from heat and blend in stand blender and then return to pot, until smooth.
7. Add meatballs to sauce and simmer another 15-20 minutes.

Serve immediately over spaghetti.
