Ingredients

    pink salmon, 1 can drained
    1 egg, slightly beaten
    2 Tablespoons flour (rice flour can be used)
    Dried Parsley, 1 Tablespoon
    Pepper or Lemon Pepper to taste
    Red Pepper, 1/2 teaspoon
    olive oil for frying

Tips

Can be frozen once cooled down, if wrapped well.
To reheat, thaw and microwave briefly.


Directions

In large bowl, add salmon and flake. Small bones and skin should be worked in with the fork until smooth.

Add rest of ingredients, form 4 patties.

Add olive oil to about 2" in the pan, heat on medium.

Add the patties and brown on each side about 5-6 minutes...until golden brown and firm. Drain on paper
towel.

Serve with ketchup, tartar or cocktail sauce.
