    I block Extra Firm Tofu
    ! Cup Spinach, thawed and drained
    5 baby bellas washed and chopped
    1/4 Cup Unsweetened Soy Milk
    1 Cup Veggie Shreds
    1/4 Cup chopped bell pepper
    1/4 tsp mustard
    1/4 tsp salt [optional]
    1 tsp corn starch [optional]
    1 tbsp Earth Balance Buttery Spread, divided
    1 9 inch deep dish pie pan
    Food processor


To drain the tofu i put the block in a colander in the sink, put a small plate over it and place something kinda heavy on the plate to press the water out. Takes 30 minutes or so.


Drain and press the tofu. Butter the pie pan with a little Earth Balance Spread. Sautee the mushrooms and pepper in the rest of the spread. Put the tofu, salt, corn starch, mustard and soy milk in a processor. Blend until it has a smooth creamy texture. Add the thawed drained spinach, mushrooms and peppers and gently mix. Add the Cheese. Pour into the pie pan and bake at 350 for 45 minutes.
