Ingredients

    2 cups of brown rice (2/3 cup uncooked)
    1 cup sharp cheddar cheese
    1 tbsp butter
    1 tsp salt
    2 cups nonfat milk
    2 eggs

Directions

1. Cook the rice and add it to the casserole dish.
2. Melt the butter in the rice.
3. Slightly beat the eggs with a fork and add to the casserole dish.
4. Add the other ingredients to the casserole dish and bake for 50 minutes at 350 degrees.

    Very Good
    This was really good! I doubled the recipe as I wanted it for a main course and 1c of rice just wasn't going to cut it. I was surprised when I pulled it out of the oven and found that it looked like a souffle! Probably due to the eggs. Will definitely make this again! - 4/8/09
