Introduction
A delicious recipe I have used for a very long time. Originally it was made with double the sugar, all purpose flour and with shortening instead of applesauce, I have switched them up to make it a bit healthier. Ingredients

5 ripe bananas
4 eggs
1 cup applesauce
1.5 cups white (or brown) sugar
1 TBSP vanilla
3.5 cups whole wheat flour
2 tsp baking soda
1 tsp salt
Tips
These work equally well as banana muffins, will make 24 full muffins. They are a hit with the kids, I will sometimes put in walnuts or chocolate chips and the kids go crazy for them.
Directions
Preheat oven to 300 degrees F
In a large bowl blend together applesauce, sugar, vanilla, banana and eggs. Put aside
In another bowl mix together flour, baking soda and salt, blend into batter.
Divide batter between the two pans and add nuts on top if desired.
Bake for 1 hr. 10 min. or until toothpick inserted comes out clean.
Serving Size: makes 2 loaves (12 servings per loaf)
