Ingredients

    3 yellow or green bell peppers, sliced the long way, seeds and veins removed
    1 medium tomato, chopped
    1 small onion, chopped
    1 small can mex corn
    1 stalk celery, chopped
    1 T. worcestershire sauce
    1 tsp. basil
    1 tsp oregano
    course ground pepper
    4 oz cottage cheese, if desired


Directions

Spray casserole dish with olive oil. Lay pepper halves in bottom. Set aside.
Combine tomato, onion, corn, celery, spices and half the cheese in small bowl. Mix well. Spoon into and over peppers. Bake 400 covered for 15 minutes.

Serving Size: 1/2 pepper = 1 serving. Serves 6
