Number of Servings: 4

Ingredients

    3 cups cooked Basmati rice
    6 Smoked Sausages (about 130 to 150 calories each)
    1 cup diced celery
    1 cup diced onion
    1 chopped green pepper
    1 796 ml can diced tomatoes (28 ounce can)
    2 tbsp Frank's RedHot Sauce (adjust to taste)

Directions

1. Add 1 cup uncooked Basmati rice to 2 cups water and cook. The end result will be roughly 3 cups cooked rice.

2. Chop up smoked sausage links and brown in non-stick pan. Add onion, celery and green pepper. Saute lightly, about 1 minute, stirring.

3. Add diced tomatoes and hot sauce. Stir until heated through.

4. Stir in cooked rice, or serve rice separately with sauce to spoon over it.
