So delicious! So delicious!
Number of Servings: 15

    3/4 cup grated zucchini
    8 eggs
    1/2 cup coconut oil (melted)
    1/4 cup stevia blend
    1 tsp vanilla extract
    1 1/2 tsp cinnamon
    1/2 tsp sea salt
    3/4 cup coconut flour
    1 tsp baking powder
    1/2 cup chopped walnuts

Make sure you get the lumps out of the coconut flour if mixing by hand.

Preheat oven to 350 degrees.

Line a medium sized loaf pan with cooking parchment and lightly oil.

Put all ingredients (except the walnuts) in a blender. Blend until well mixed and coconut flour is no longer lumpy.

Stir in walnuts and pour into loaf pan.

Bake for 1 hour.

Serving Size: makes 15 slices; approx 1/2 inch thick

  • Wonderful! Taste and texture spot on for my old standard quick bread recipe. Was nervous about the 8 eggs, but bread isn't eggs or runny. Thanks for the great recipe..saving this one . - 8/13/16

  • This is amazing! I'm doing some slight modifications to it and it will go into my holiday collection. Yes, it's THAT good. I believe Barb3723 tried substituting another not-as-absorbent flour for the coconut flour- that is the only thing that could have happened. My loaf was perfect! - 9/21/14

There is something wrong here. I questioned 8 eggs in 1 loaf of bread and I was right. This came out like a big beige, baked , omelet. It was horrible! Such a waste of expensive engredients. - 11/2/13

Hmmm... you must have done something wrong. Mine turns out beautifully every time. Are you sure you used COCONUT flour?
