Ingredients

    2 Tbsp Brown Sugar, packed
    1.5 Tbsp oil
    2Tbsp cinnamon
    7.5 Cups chickpeas (this is about 2lbs dried-- adjust recipe for however much you have)
    1Tbsp honey

Tips

I use a LOT more cinnamon than is listed here, as I'm not convinced you can overdo the cinnamon! I sprinkle more on at every stage-- on the sheet, when I shake them, with the honey.

Dried chickpeas work better as they don't have a salty, processed flavor that competes with the sweetness.

Thicker, less sweet honey works really well-- I find store-bought makes them taste fake somehow, so if you can find a good local honey, it will be worth it!

Keep in an airtight container (mine are still good after 3 months!).


Directions

If using dried chickpeas, soak overnight and cook according to standard. Dry chickpeas as much as possible (on a tea towel). Combine sugar, oil, and cinnamon in the bottom of a large bowl, add chickpeas and stir (hands are the best tool for this, as a spoon doesn't seem to get everything distributed as well). Spread in a single layer on a parchment lined tray (or two for this amount). Bake for about 45 minutes at 350, shaking once or twice-- Keep a careful eye on them after about a half an hour, but they may take up to an hour. Take them out after they get darker and dried throughout-- they may not be crunchy yet, but as long as they aren't soft, you can take them out.

Return to the mixing bowl. Drizzle honey over them as you swirl. Return to the baking sheets to cool and get crunchy.
