Introduction

Ingredients

    3 Eggs
    1/4 cup coconut oil
    1/4 cup milk
    2 teaspoons vanilla
    1 small banana, mashed
    1 cup flour
    1 cup whole grain flour
    1 cup old fashioned oats
    1/3 cup brown sugar, packed
    2 teaspoons baking soda
    2 teaspoons cinnamon
    1/2 teaspoon salt
    1 1/3 cups shredded carrot
    2 cups shredded zucchini
    1 small apple cored and chopped
    1/2 cup coconut
    1/2 cup raisins
    1/2 cup chopped walnuts or almonds
    1 scoop (oz) of vanilla protein powder

Tips

I use foil muffin liners, thus allowing for easy clean up and eliminating the need for greasing the pan. Paper ones tend to stick to the warm muffins due to the low amount of fat.


Directions

Combine all dry ingredients, stir in nuts, raisins and apple. Combine mashed banana, eggs, oil, vanilla and milk. Add carrots and zucchini to these wet ingredients. Combine wet ingredients to dry, stirring just until moistened. Divide into muffin cups and bake at 350 degrees 20-25 minutes
