A Vegetarian Tikka that my family gobbles up. A Vegetarian Tikka that my family gobbles up.
Number of Servings: 4


    1 large package Firm Tofu
    1 cup non fat plain yogurt (I prefer Greek)
    4 tsp cumin
    2 tsp cayanne
    1 Tlb fresh minced ginger
    1 Tbl lemon juice
    1 tsp cinnamon
    salt and peper to taste
    wood skewers
    1 Tbl unsalted butter
    1 clove garlic
    1 Jalapeno
    1 can (8oz) tomato sauce
    1 cup fat free half and half
    1/4 cup chopped fresh cilantro


you can replace the tofu with chicken of turkey for variation.


Cube tofu into 1 inch cubes and place in covered container. Add yogurt, lemon Juice, 2 tsp ground cumin, cayenne, cinnamon and ginger. Salt and pepper to taste. Toss well. refrigerate for at least and hour ( I let it sit all day).
Cook rice as directed by manufacturer.
Place tofu on skewers (about 10 pieces per skewer) and cook under the broiler or on the grill about 5 to 8 minuets per side or until golden brown.
In a sauce pan melt butter. Saute garlic and jalapeno for a min. Add 2 tsp cumin, paprika and salt to taste. Stir in tomato sauce and fat free half and half. simmer sauce until it thickens (about 10 min). Serve as suggested. (1cup rice with 3 to 4 skewers and a half cup sauce). Garnish with cilantro.

Serving Size: 1 cup rice and 3 skewers with 1/2 cup sauce
