Introduction

Ingredients

    8 cups oats
    1 1/2 cups oat bran
    1 1/2 cups wheat germ
    2 cups coconut, sweetened
    1 cup walnuts, finely chopped
    1 cup almonds, finely chopped
    1/2 cup flax meal

    1 cup olive oil
    3/4 cup honey
    1/4 cup maple syrup
    1/2 cup brown sugar
    1 1/2 t. salt
    2 t. cinnamon
    1 t. vanilla


Tips

You can add or substitute other grains or nuts as you desire. Try pumpkin seeds, pecans, sunflower seeds, etc.


Directions

Preheat oven to 325 degrees. Prepare two large baking sheets (cookie sheets) with parchment paper. Set aside.
In a very large bowl, combine the first seven ingredients.
In a sauce pan combine the last seven ingredients. Oven medium heat stir until it comes to a boil. Remove from heat and pour over the dry mix. Stir it in until it is evenly coated.
Divide the granola between the two baking sheets and spread it around evenly. Place pans in the oven on two shelves and bake for 10 min. Remove from oven and gently stir the granola and return to oven. Switch shelves if possible, and bake for 10 more minutes.
Remove from oven and allow to cool completely. Store in a large, airtight container. (A 5 qt. ice cream bucket works great.)
Serve plain, as a cereal with milk, or with yogurt.
