Introduction

Kids love popsicles just about any time of year and when they're healthy like these you're glad they do. Kids love popsicles just about any time of year and when they're healthy like these you're glad they do.
Number of Servings: 6

Ingredients

    2 cups orange juice
    1 cup fresh pineapple chunks
    1/4 cup of raw white honey

Tips

I used sliced dried coconut here in the photo but I don't think that was the best choice. It was too dry. Fresh young coconut meat would work much better. Chunks of pineapple or orange chunks stirred in should also be good.


Directions

l. Blend the orange juice, pineapple chunks and sweetener together in a blender.

2. Pour into popsicle molds leaving a little room at the top for expansion.

3. Freeze for six plus hours until completely solid.
Once they are frozen, run just enough warm water over the molds until they come out.

4. Eat immediately or add chocolate drizzle.

Chocolate Drizzle:
1. Place popsicle immediately on a cookie sheet lined with parchment paper and put back into the freezer.

2. Then melt a chocolate bar or chocolate chips in a double boiler.

3. Drizzle the chocolate over the popsicles with a spoon or put chocolate in a ziplock baggie with a hole in the corner to drizzle it on.

4. Either place back in the freezer for later or eat immediately.
