Introduction

Handy little breakfast in the shape of a muffin. Couscous can be substituted for quinoa. Handy little breakfast in the shape of a muffin. Couscous can be substituted for quinoa.

Ingredients

    Couscous/quinoa- 2 Cups Cooked (Quinoa is gluten free!)
    4 eggs
    1 Cup shredded carrots
    1 TBSP minced garlic- give or take to taste
    1 1/2 Cup shredded cheese
    3/4 C chopped meat- bacon, leftovers, lunch meat
    1/4 C diced onion

    FOR GLUTEN FREE- USE either GF Couscous or Quinoa. I happened to have had Couscous on hand when I made these. Either one would work the same way

Tips

Remember to temper your couscous so that when you add your eggs, they don't cook in the mixing bowl. Also, feel free to spice it up a bit. I fixed these for my son, who is Autistic. He doesn't like ANY spice. Enjoy!


Directions

Cook quinoa/couscous as instructed and set aside to cool a little bit.
Personally- I put the carrots, onion & garlic in the food processor and let it rip. (But I have to 'hide' veggies from my autistic son.)
Then I added it to the cheese and meat in a mixing bowl.
Then, I add my couscous so that the cooler items temper it a little bit.
then add eggs.
Mix by hand and load into prepared muffin tins.
