Ingredients

    1 tbsp. low-fat margarine
    1 tsp. minced garlic (Add 2 tsp if you like a bigger garlic taste)
    1 tbsp. all-purpose flour
    1 c. fat-free milk
    1/4 c. nonfat or low-fat cream cheese
    1/4 c. grated parmesan cheese
    salt
    pepper

Tips

If you like to do a "half & half" sauce (half alfredo/ half red sauce) You can can add 12 oz of marinara sauce or 12 oz of diced tomatoes (without juice). Add to pot, after finishing alfredo recipe, and let cook for a few extra minutes, until thoroughly warmed.


Directions

First, gather all ingredients and have them measured out and ready to go, because the cooking process will go quickly.

In non-stick saucepan, add margarine and garlic.
Saute over medium- medium/low heat until garlic is fragrant. (about 30 seconds) Whisk in flour, then slowly whisk in the milk.
Continue to cook mixture over medium/low heat, stirring continually, until slightly thick. (about 2 minutes)
Whisk in cream cheese and parmesan until smooth. (about 1-2 mins)
Add salt & pepper to taste.
Remove from heat and cover, until ready to serve, over your favorite pasta.
