Ingredients

Egg, fresh, 6 large
Spinach, fresh, 2 cup
Mozzarella Cheese, part skim milk, 6 oz
*Hormel Bacon Bits, 6 tbsp
Fresh Chives, 6 tsp chopped
*Lawry's Seasoned Salt, 1.5 tsp
Pepper, black, 1.5 tsp
Tips
Try cooked, crumbled sausage in place of bacon
Make a vegetarian version with your favorite veggies, i.e. Bell peppers, mushrooms, broccoli, etc.
Like your eggs more moist? Add a 1/4 cup of low-fat milk or water.
Dress things up with a sprinkle of Parmesan cheese.
Directions
Preheat the oven to 350 degrees F. Spray inside of muffin tin with cooking spray. Crack each of the eggs into the mixing bowl, whisk.
Next, stir in the bacon crumbles, diced spinach, onion, and about 2/3 of the cheese. Whisk together, add in the salt and pepper to taste. Once the mixture is evenly blended, spoon or pour it evenly into each muffin cup.
Sprinkle the remainder of the cheese on top of each and pop into the oven! Bake for 20 – 25 minutes, or until the egg is cooked all the way through.
Let them cool for 5 – 10 minutes, pop them out and serve!
