Ingredients

    1C wheat bran
    2 1/2 C unbleached wheat flour
    1 C boiling water
    2 1/2 tsp baking soda
    1/2 C butter
    1/2 tsp salt
    2 C lowfat buttermilk
    2 C shredded zucchini
    2 beaten eggs
    1 C sugar
    1/2 C brown sugar
    2 C wheat bran

    optional - 1/2 chopped nuts
    extra sugar to sprinkle on top

Tips

You can substitute plain yogurt for the buttermilk and it works just as good. Don't have zucchihi? Substitute mashed banana for the zucchini or you can use dried fruit. If you use dried fruit - reduce to 1 cup.


Directions

Mix 1 C wheat bran with boiling water in a large bowl. Add the butter to allow it to melt. Add buttermilk, eggs, sugars, zucchini (or other fruit) and remaining 2 C bran and mix well. In another bowl sift the dry ingredients together. Add the dry ingredients into the wet ingredients and mix well. Spoon into prepared muffin pans. Sprinkle additional sugar on top if desired. Bake at 400 degrees for about 20-25 minutes. Remove muffins from pan and place on rack to cool.
