Introduction
Garbanzo (chickpeas) and black beans power-pack this cool salad with healthy fiber and plant protein. It's a test of your dicing skills although I've been known to throw things in my chopper on a weeknight for speed and not tell a soul. The corn, black beans and cilantro instantly hint of some sort of southwestern flair, so while this can be dressed with any vinaigrette of your choosing, my Citrus Chipotle vinaigrette is one of my favorites. Serve with whole wheat pearl cousous or orzo, brown rice, or in whole wheat tortillas for a refreshing wrap. Ingredients

1 15 oz. can garbanzo beans, rinsed
1 15 oz. can black beans, rinsed
1 15 oz. can yellow sweet corn, rinsed
2 medium tomatoes, diced
1 cucumber, diced
1/2 bunch scallions, sliced
1 small red onion, diced
1 cilantro bunch, chopped
Tips
You can use a chopper for the onions, cucumber, cilantro and tomatoes if you're pressed for time.
Directions
Foolproof cooking: just combine all ingredients after they've been rinsed, diced or chopped. Dress with my Citrus Chipotle vinaigrette or any other dressing of your choosing.
