Introduction
There's a restaurant in town that serves "Maltese-Style Dinners," with a tasty red-sauce and no dairy to speak of. My boyfriend and I threw this together in an effort to remake the taste at home. Ingredients

1.5 lb tri-tip
2 Tbsp chopped garlic
1/2 Tbsp Worcestershire sauce
3.75 lbs tomatoes, cored and chopped
1/4 c. fresh basil
1 Tbsp fresh oregano
1.5 tsp sea salt
1 cup red wine
Directions
Slice the tri-tip into bite-sized pieces. Brown in a pot with the chopped garlic and Worcestershire sauce. Add about half a cup of the red wine, and simmer about 5 minutes. Remove meat from pot, leaving the liquid behind.
Add the tomatoes to the pot, followed by the herbs and half the salt. Let simmer for 20 minutes, then remove from heat and use an immersion blender to puree the sauce. Add the meat, the rest of the wine, and the rest of the salt (if needed), and simmer on low for 2-3 hours, or until it is reduced to 6 cups.
Serve over your choice of pasta, with squash or steamed veggies on the side.
