Ingredients

    6 large eggs
    1/4 cup cottage cheese 1%
    4 slices turkey bacon, canadian bacon or ham, chopped
    1/2 cup chopped vegetables (broccoli, red and green pepper, green onion, mushrooms, etc)
    1 cup grated cheddar cheese (light if you have it)

Directions

Preheat oven to 375. Place two muffin cups in each of 6 cups in a muffin tin. Spray with non-stick spray. Evenly spread the chopped bacon, then the vegetables and the cheese in each cup. Beat the eggs together with the cottage cheese and salt and pepper to taste. Pour the egg mixture into the filled cups until 3/4 full. Bake until set on top - 25 to 35 minutes.
