Ingredients

1 1/2 cup AP flour
1 1/4 cup Whole Wheat flour
1 scoop vanilla protein powder
3/4 tsp baking powder
1/4 tsp salt
1/2 cup butter
1/2 cup unsweetened applesauce
1/3 cup sugar
1/3 cup splenda
1 egg, beaten
1 Tbsp milk
powdered sugar for dusting
Tips
Directions
Sift together flours, protein powder, baking powder and salt. Set aside. Place butter, applesauce and sugar in large bowl and beat until light in color with electric mixer. Add egg and milk and beat to combine. Put mixer on low speed and add flour mixture gradually until it pulls away from the side of the bowl.
Preheat oven to 375
Sprinkle surface and rolling pin with powdered sugar. Roll out dough to 1/4 in thick. Cut into desired shapes, place at least 1 inch apart on greased or parchment lined baking sheet. Bake for 7-9 minutes or until browned around edges, rotating cookies halfway through baking time. Let sit on baking sheet for 2 mintues after removing from oven and then move to a wire rack. Decorate when cooled. Store in airtight container up to one week.
