Ingredients

1lb of chicken cut into chunks
1 1/5 cups of Farfalle pasta prepared
1/8 cup each of onion and green pepper
4 cups of fresh spinach
5 ounces of baby bella mushrooms sliced (or any mushrooms really, I just prefer portabello)
1 tbs of olive oil
Garlic powder
salt and pepper
oregano
Tips
I used fresh oregano, I have a plant growing in my kitchen.
Directions
Brown chicken with non stick, non fat spray, salt and pepper if desired.
Remove from pan and set aside
Saute the mushrooms, garlic, spinach, onion, and green pepper till spinach and onions are tender
Coat prepared pasta with olive oil, add garlic powder, oregano and salt and pepper to taste.
Mix chicken, veggies and pasta together
Serving Size: Makes 4 servings
