1 cup - Progresso Italian Style breadcrumbs
2 tblsp - Extra Virgin Olive Oil
salt and pepper to taste
Directions
Preheat oven to 275 degrees.
Line a 9X13 pan with foil
Rinse & Slice okra crossways in 1-2 inch pieces
In a medium bowl, toss okra with breadcrumbs until well coated - place okra in pan and drizzle one tblsp olive oil over - stir lightly and place in oven-
Bake for 10 minutes, add last tblsp. of olive oil and stir once more. Continue baking for 5-10 minutes or until okra is lightly crisped on the outside.
