Number of Servings: 8

Ingredients

    1 can (14.5 oz) Black Beans, Rinsed
    1 lb Ground Pork Sausage
    1/2 cup Diced Tomatoes
    1 cup Chopped Carrots
    1 Yellow Onion, Large
    2 cloves Garlic
    2 Shallots
    4 cups Chicken Broth
    2 tspn Worchestershire Sauce
    1/2 tspn Dried Italian Seasoning
    1/4 tspn Crushed Red Pepper (to taste)

Tips

Use low-sodium broth and worchestershire sauce to cut down on the salt. Nutritional info includes low-sodium broth, but regular worchestershire sauce. Even better - try to find a lower-sodium sausage!


Directions

1. Chop onion & shallots, mince garlic.

2. Mix with sausage and cook in large pan on stovetop. Drain and discard fat.

3. Place mixture and all other ingredients into slow cooker. Cook on high for 4 hours.

Serving Size: Makes about 8 one cup servings
