Ingredients

    1/2 roll (250 grams) prepared polenta (Food Merchants Sun Dried Tomato Garlic is good)
    1/2 cup diced lean ham
    1/2 cup slivered red onion
    1 cup fresh spinach leaves
    2 tsp Smart Balance Light Buttery Spread
    1 oz white wine (not cooking wine)
    1/4 tsp smoked paprika
    Fresh ground pepper to taste

Directions

Heat a nonstick skillet on medium; spray with nonstick cooking spray if desired. Slice polenta into 6 slices (about 1/2 inch thick). Fry until slightly crisp and heated through, seasoning each side with paprika and black pepper. Remove and place on a serving plate.

Melt buttery spread in pan over medium heat. Add onions and briefly sautee. Add ham and spinach and season with black pepper. Sautee, tossing frequently, until spinach is wilted and onions are slightly translucent but still crisp. Add wine and sautee briefly, scraping up any browned bits from pan.

Place spinach mixture on top of polenta and enjoy. Makes a filling dinner for one, or a side dish for two.

    Delicious! The sodium is quite high, but it is low in fat and has some fiber so I say yes! - 2/6/08
