Ingredients

    3.5lbs pot roast cut into chunks
    salt and pepper the pot roast throw in a high heat dutch oven and brown then remove.
    Add 3-4 cups of bell peppers whatever colors you like and 1-2 cups of onions.
    Add 3 cans of no salt added diced tomatoes
    1 cup of stock in this case all I had was chicken so that's what I used
    Add 5 garlic cloves minced
    1tlbs. oregano
    1tlbs. cumin
    1 tsp. cayenne
    1 tlbs. chili powder
    1 tsp. red pepper chili flakes
    salt and pepper to taste
    let simmer for 1/2 hour then add a big 15 oz can of beans rinsed and drained whatever kind you like I used red kidney b/c that's what I had
    then add the meat back in and let simmer for at least 1 hour up to however many hours you want.

Tips

I substitute beef brisket sometimes too this is a once in a while dish due to the meat but it is very tasty
