Introduction

I tweaked this from several recipes for butternut squash soup I found. I tweaked this from several recipes for butternut squash soup I found.
Number of Servings: 12

Ingredients

    2 pounds Butternut Squash, cut into 1 inch cubes
    1 Cup chopped onions
    3 cups Chicken Stock
    1 Stick of butter
    Salt and Pepper to taste
    1 (8 oz) package of cream cheese, softened

Tips

To make smoother you could blend it, but I don't have a blender so I just mashed it. You can add any sort of herbs to this you'd like to give it more kick. This is a good base.


Directions

Place everything except for cream cheese in slow cooker on High for 4 hours.
Mash everything together and add in pieces of cream cheese slowly to incoropate it.

    Incredible!
    Very good! I added some carrots, apples, & sweet potatoes & some skim milk. Delicious creamy Autumn soup. I'll make this again. Next time, I think I'll puree the squash, carrots & apples and then add to the Crock Pot. I love the way the flavors blend. - 11/12/15
