Ingredients

Cooked chicken breast (diced), 12-14 ounces
Raisins, .25 cup, packed
Pecans, .25 cup, chopped
Celery, raw, 1 stalk, medium (7-1/2" - 8" long)
Apple, Gala (medium), .5 apple
Fresh Chives, 3 tbsp chopped
Curry powder, .5 tsp
Pepper, black, .5 tsp
Lemon juice, 1 tbsp
Light Mayonnaise (Mayo), 1 tbsp
Honey Mustard, 1 tsp
Salt, .5 tsp
Tips
Don't feel like cooking chicken? Use, 12-14 ounces of chunk chicken in water.
Adding in some shredded cheese gives it a nice twist.
Directions
1. Combine curry powder, pepper, lemon juice, mayo, and honey mustard in a medium bowl, stirring with a whisk until well blended.
2. Add the chicken, raisins, pecans, celery, apple, chives, and salt
3. Stir mixture well to combine. Cover and chill. This salad is best if eaten the day after preparation allowing time for the ingredients to mingle, giving a fuller flavor.
