Introduction

Ingredients

    8 oz. ground turkey
    1/2 C onion, minced
    6 tsp Old El Paso Low Sodium Taco Seasoning mix
    1/4 C water
    4 C Romaine lettuce (or the lettuce of your choice)
    2 Roma tomatoes, diced
    1 C canned black beans, rinsed and drained
    1 C Dannon plain fat-free yogurt
    4 T scallions, minced (including the green tops)
    1 clove garlic, minced
    2 Old El Paso Hard Taco Shells, crushed into bite-sized pieces

Tips

This recipe can be changed to suit your taste with little additional calories with the addition of pickled jalepeno slices, sliced black olives, thawed frozen corn, low or fat-free cheddar cheese


Directions

In a non-stick pan, saute ground turkey and onions until done. Sprinkle in the taco seasoning mix, stir well. Add water. Simmer until liquid has evaporated.

In a large salad bowl, add romaine, tomatoes and black beans, mix well.

In a small bowl, add yogurt, scallions and garlic.

Portion out the salad mixture into four bowls or plates. top with taco shell crumbles and drizzle yogurt dressing on top.
