Ingredients

    2 TBSP dijon mustard
    2 TBSP fresh lemon juice*
    zest of half a lemon (optional)
    1 TBSP light mayonnaise
    .75 tsp dried tarragon, crumpled to release its smell
    a few grindings of fresh pepper

    .5 cup olive oil
    .5 cup orange juice


Tips

The mayo does the job of binding the dressing so that it doesn`t separate. If it should, while sitting in your fridge, give it a shake and it`s good to go.


Directions

In a large bowl, whisk together the mustard, lemon juice & zest, mayo, tarragon & pepper.

Gradually whisk in the olive oil in a steady stream, then do the same with the orange juice. Done.
Store in the fridge.

Salad dressing tip: Instead of putting dressing on the table, toss the salad beforehand. Choose an extra-large bowl, and pour in 1 TBSP of dressing - or more, depending on how many the salad is feeding. Tip the bowl to coat the inside with dressing and THEN add the salad, tossing to coat. I bet you`ll find that you use less and that your salad still tastes great.
