Introduction

Delish cakes with jam, marmalade, nut butters, or just plain with tea or coffee. My husband's mum used to make these. Ingredients

    2 cups of stone ground oats (or steel cut, but stone ground works better).
    2 tsp maple syrup
    1tsp kosher salt
    1/2 tsp bicarbonate of soda
    2 Tbsp lard or bacon fat
    6 Tbsp boiling water

Tips

The cakes end up thin and on the dry side. They should hold together.


Directions

Process stone ground oats, maple syrup, kosher salt and bicarbonate of soda for 3 minutes in food processor. Add lard (or bacon fat), add boiling water x6 Tbsp, blend. Rest. Add water and mix as necessary. Roll half dough to 1/8 inch thickness. Cut 3 inch rounds and place on cookie tray. Use wax paper to roll out. Do same with second half of dough. Fill 2 cookie trays. Bake @ 350 for 10 minutes. Turn over and bake 5 minutes. Allow to cool.
