Ingredients

1 c flour
1 tbsp baking powder
1/2 tsp baking soda
1/8 tsp kosher salt
1 c mashed bananas
1/4 c sugar
1/4 c applesauce
1 egg
1/2 tsp vanilla extract
Tips
Use over-ripe bananas for best flavor. I put my over-ripening bananas in the freezer to save for this occasion. It typically takes two large banana's to net 1 cup.
Directions
Preheat oven to 350 degrees. Grease or line muffin cups.
Mix together flour, baking powder, baking soda, and salt. In a seperate bowl, beat together bananas, sugar, and egg. Stir in applesauce and vanilla. Stir banana mixture into flour until just combined. Scoop into muffin cups
Bake for 15-20 minutes or until a toothpick inserted into center of muffin comes out clean.
