Introduction

This is a variation I came up with based upon one for baked potatoes in the Silver Palate Cookbook. This is a variation I came up with based upon one for baked potatoes in the Silver Palate Cookbook.
Number of Servings: 4

Ingredients

    2 Large Sweet Potatoes
    1/4 cup crumbled Feta cheese
    6 Green kalamata olives
    1/4 cup heavy cream

Directions

Preheat the oven to 425. Bake sweet potatoes for about 45 minutes until cook so knife inserts easily. Remove from the oven and cool until easy to handle.

Scoop out the flesh being careful not to rip the skin. Mash the potatoes and then fold in the olives and half of the feta cheese. Whip in the heavy cream. Refill the shells with the mixture and top with remaining feta.

Heat in a 400 degree oven until cheese is melted and potatoes are warmed through, about 30 to 40 minutes.
