Ingredients

500g cottage cheese (túró; look for the low fat option)
125g semolina
40g raisins
1 egg
55g sugar (if you like it very sweet put more in)
lemon zest
water (as much as the semolina takes so the mix is not too hard, not too liquidy)
You'd need a tray greased (anything you fancy) and coated with fine breadcrumbs (so it comes out easily).
Tips
Excellent with syrups, jams but on its own too.
Directions
Preheat the oven 150 C degrees.
Put the cottage cheese into a bowl and stir it. Mix the fresh egg, the sugar, the raisins, lemon zest and the semolina. Pour as much water in that makes a nice soft doughy texture.
Let it sit while you prepare the tray (any kind). Grease it and sprinkle the fine breadcrumbs so it coats the tray.
Check the consistency again (semolina soaks the water up - so will the raisins in the oven).
Pour the mixture in the tray, make sure it's even and pop it in the oven. in 20mins check it, when it's brown, it's done. Let it cool a bit then take it out of the tray. You may need to go around the edges with a sharp knife.
Serving Size: 20 X 1.5cm pieces in my long baking tray, altogether 800g. Serving calculation is for every 40g
