    2 pound extra lean ground beef
    1 medium onion, diced
    2 pounds sliced/chopped mushrooms, mix of button, crimini, and shiitake
    1 large head of napa cabbage, chopped
    8 ounces of fat-free greek-style yogurt
    1 cup whipped cream cheese
    spices to taste (thyme, parsley, etc)


In large skillet, sweat onions, mushrooms, and spices until onions are soft and golden and mushrooms have lost most of their water. Then add in ground beef, and cook all through. Add in yogurt and cheese and stir till creamy.

In a non stick pan, sweat cabbage until al dente. Serve sauce over cabbage.

Serving Size: makes 8 servings
