Introduction
My family loves Quiche Lorraine but the traditional dish is very high in fat and calories. I came up with this recipe in an attempt to create a healthier version. This still has a lot of calories. Ingredients

3 eggs ( I use egg lands best)
1 1/3 cup evaporated skim milk
2 cups reduced fat shredded cheddar cheese
black pepper
2 cloves garlic
1/4 cup onion diced
1 cup shredded spinach leaves
prepared 9 in pie crust
4 pieces turkey bacon
1 tbsp olive oil
Directions
1. Cook bacon in non stick pan.
2. Saute in small amount of oil garlic, onions, and spinach.
3. In a separate bowl, combine eggs, milk, and cheese.
4, Stir in bacon and spinach /onion/garlic mixture.
5. Bake pie crust for 8 mins at 400 degrees.
6. Pour egg mixture into partially cooked pie shell. Bake at 375 degrees for 45-60 minutes . Quiche will be firm and not runny when done.
Serving Size: 1/8th of the pie
