Ingredients

    12 oz ground beef
    2 cups pasta sauce from jar, I use safeway select
    4 barilla no boil lasagna noodles
    1 egg, beaten
    15 oz container ricotta
    1 cup mozzarella
    1/4 cup grated parmesan
    1 cup frozen spinach

Tips

This is adapted from the Better Home & Gardens cookbook. I use whatever type of pasta sauce I happen to have lying around, which does affect the nutritional info a tad. This recipe is not necessarily "low" carb, but it does have a lower carb count than many lasagnas, and is quite a bit below the count in the cookbook I adapted it from.


Directions

Cook ground beef til no longer pink. Stir in pasta sauce. In the meantime, mix together the egg, ricotta, parmesan & spinach. In 8x8 pan, put down about 1/2 cup of sauce/meat mixture on bottom. Put down 2 of the noodles. Spread 1/2 the ricotta mixture on top of the noodles, then pour 1/2 of the remaining sauce mixture over that. Put down 2 more noodles, spread the rest of the ricotta mixture over that & pour over the rest of the sauce. Sprinkle with the mozzarella & some additional parmesan if desired. Bake at 375* F for 30 minutes. Let stand 10 min before serving.
