Ingredients

    4 oz neufchatel cheese
    3 tsp granulated sugar
    1 cup canned pure pumpkin
    1/2 cup nonfat milk
    2 tbls vanilla sugar free/fat free pudding mix, dry
    8 oz whipped topping, lite
    9" Pillsbury refrigerated pie crust
    1/4 tsp nutmeg
    1/4 tsp cloves
    1/4 tsp ginger
    1 1/2 tsp cinnamon

    Additional whipped topping for serving (optional)
    Cinnamon for dusting (optional)

Tips

Sub out pumpkin pie seasoning for the spices or use the measurements for your own taste buds.

This doesn't make a "full" pie. If you want it more mounded as opposed to flat, you might want to do 1 and 1/2 the recipe. That will obviously change the nutritionals, but would be just as easy and delicious!

I'm sure you could go bare bones and use fat free cream cheese and fat free cool whip, if you do please let me know how you liked it!!


Directions

Prepare the crust according to the package instructions. Let it cool completely before filling.

In a mixing bowl, beat the cream cheese and granulated sugar until the mixture is soft. Combine the rest of the ingredients, except for the whipped topping. Once the mixture is well combined, blend in the whipped topping. Once the crust is completely cool, spoon the filling in.

Refrigerate 4 hours or overnight

Serve with additional whipped topping and a dusting of cinnamon! Enjoy!
