Introduction

Ingredients

1 boneless, skinless chicken breast sliced lengthwise to thin it out the width, then diagonally into bite-size pieces
2 tbsp olive oil
1 medium onion, chopped
1/2 cup sliced mushrooms
1/2 cup chopped green pepper
3 cloves garlic, chopped
1 - 16 oz bag frozen Cavatelli
4 oz shredded part skim mozzarella cheese
1 tbsp grated Parmesan cheese
Some poultry seasoning, oregano, crushed rosemary, salt and pepper to taste
1 bunch broccoli florets
Directions
In a deep non-stick pan, heat olive oil, add chicken pieces and saute' on both sides until slightly browned.
Add onions, green pepper, mushrooms and seasonings.
Simmer until chicken is done about 25 minutes.
While chicken is simmering, cook cavatelli according to package directions and strain.
Add it to the chicken, mixing all ingredients well.
Serve with steamed broccoli florets cooked with garlic.
Use florets with short stems, trim the skins off broccoli stems carefully, chop 1 clove garlic, add both in a pot with about 1/2 cup water and 1 tbsp olive oil and steam for approx 5-10 minutes until crispy tender.
Strain with slotted spoon onto your serving plate.
Presentation -- place chicken mixture in the center of an oval or round serving plate with the broccoli crowns on outside circumference.
Sprinkle shredded mozzarella cheese on top of chicken mixture and Parmesan on broccoli.
