Introduction

Number of Servings: 16

Ingredients

    CAKE
    2 medium Eggs
    2 1/3 of a cup Splenda
    1/2 cup nonfat Milk
    110 g Light Butter
    170 g Self Raising Flour (or Cake Flour with 1/2 tsp Baking Powder)
    2 tblsp Orange Peel

    SYRUP
    1/2 cup Orange Juice
    2 tblsp Splenda

Directions

Preheat oven to 350 deg F (180 deg C)
Place all the cake ingredients in bowl and beat for three minutes. Pour into a greased and lightly floured ring pan.
Cook for @ 30 mins or until a toothpick comes out clean when inserted into the middle
While cooking cake combine syrup ingredients in a saucepan and bring to the boil, simmer until it becomes slightly syrupy.
When the cake is cooked, turn out and pour over the syrup.

    I can't understand the previous post, this was a lovely light cake, definitely not gooey. One thing I'd change would be to double the syrup to pour over the cake if you are using it as a dessert. Otherwise very nice. - 7/5/08

    This has a nice flavor, but there's just not enough flour in the mixture to give it a true cakey consistency. It came out more gooey and sticky than a cake should. If I make it again, it will have to have more flour. - 7/3/08

    I have made this cake numerous times and have yet to have it come out "gooey" I can only assume it wasn't cooked long enough.
