Ingredients
-
1.14 lbs Ground turkey
1 c. diced peppers (yellow, green, red)
7 oz Corn Salsa
Pace Mild Salsa, 16 oz bottle
1 can chili beans, low sodium, rinsed
1 can Diced Fire Roasted Tomatoes w/garlic
1 tbs Mrs Dash Fiesta Lime
.5 tbs chili powder
Optional toppings:
(not listed in the nutrients)
fat free shredded cheese-cheddar, whatever you like
fat free or low fat sour cream OR plain yogurt
sliced black olives
jalapeno peppers (to taste)
Tips
I added a pound of ground turkey; you can also reduce that amount by half or more.
If you're not in a meat mood, chopped up mushrooms made a great substitute for the turkey/beef/meat.
Add veggies to the chili! Just be sure to keep track of how much your slow-cooker will hold. You might want to reduce the amount of salsa to fit more vegetables in.
Directions
Real simple!
1. Pull out your 5 to 6 quart slow-cooker
2. Open the tomatoes, salsas, etc and place into the slow-cooker. Be sure to rinse the beans if you used canned beans.
3. On the stove top, brown the turkey with the diced peppers. Add some Mrs Dash Fiesta Lime and chili seasoning. Also add some into the slow-cooker (to taste).
4. Add the browned turkey to the slow-cooker.
It should top up a 5/6 quart cooker almost up to the lid.
