Ingredients

    Ingredients:
    1 can pumpkin puree (15oz)
    1/3 Cup unsweetened applesauce
    1/2 Cup packed brown sugar
    2 tsp vanilla extract
    1.5 tsp cinnamon
    1 tsp nutmeg
    1 tsp Pumpkin pie spice
    1 tsp baking soda
    1 Cup whole wheat flour
    3 Cups Oatmeal (old fashioned)
3/4 Cup chocolate chips (I love the Trader Joe's brand)

Tips

If you place all of your ingredients out on the counter and open everything before you start mixing, it will save you time.

Directions

Serving Size: Makes about 46-47 TBSP bite size pieces

Preheat oven to 375 degrees F.

In a large bowl mix all ingredients together. The mixture should be fairly wet looking, but not runny. If it is too runny and will not form, add a little more flour.

Use a tablespoon to measure out each serving and measure it flat, not heaping. You can roll each serving to make it a round shape or shape however you would like. These bites do not spread, and typically hold their form. You can place them fairly close together too because of this.

Bake between 11-17 minutes. I like to bake mine for about 15 minutes. They come out chewy and moist.
