Introduction
These cookies are some of my favorites from childhood. They keep for ages, and are not too bad for you if you don't eat too many! You can add lots of other ingredients to change the flavor - the recipe is pretty much bulletproof. Try it with nuts, chocolate chips, craisins, cinnamon - the possibilities are endless! They also pack and ship beautifully. Yum! These cookies are some of my favorites from childhood. They keep for ages, and are not too bad for you if you don't eat too many! Ingredients
-
1 c. shortening (Recipe calculated with Butter Flavor Crisco)
1 c. brown sugar
1 c. white sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
2 c. flour
2 c. rice crispies
2 c. oatmeal (quick cooking, not instant)
1 c. coconut
1/2 c. raisins
Directions
Preheat oven to 350 degrees F.
In a large bowl, cream together the shortening and sugars. Add eggs and vanilla and beat until smooth.
In a separate bowl, combine flour, soda, salt, and powder. Add to wet ingredients and stir until well combined. This is the "glue" that will hold the cookies together.
Add rice crispies, oatmeal, coconut and raisins.
Form in teaspoonfuls onto lightly greased baking sheet, about an inch apart.
*** Please note: To get 150 from this recipe, you have to use an ACTUAL, leveled teaspoon measure. Feel free to make them larger if you wish, but the portion calculated is based on 1 tsp. each. Cookies will be about 1 1/4" in diameter.
Bake at 350 degrees F until lightly browned - 10-15 minutes.
Yields about 150 cookies!
