Number of Servings: 4

Ingredients

    2-Avocados, California (Haas), 2 fruit without skin and seeds
    1 lg Red Ripe Tomatoes, 1 cup, chopped
    1 Onion medium (2-1/2" dia)
    1- Jalapeno Pepper Small, seeded,
    3/4 cup Cilantro
    1 tsp lite salt
    1 tsp black pepper
    1 lg Lime Juice

Tips

Instead of doing all the chopping, I will buy fresh pico from the grocery. Then all I have to do is mix in Avacado, salt, pepper, cilantro and lime juice.


Directions

In a bowl, combine all ingredients except avocado. Set aside so flavors meld. Cut avocados in half long ways. Remove and save pit. Scoop out fruit from shell and place into a separate bowl. Mash with a fork until desired consistency is reached. Mix other ingredients with avocado. Place pits back into bowl to slow the "browning" process of the avocado. Serve with chips or Baked Scoops.

Serving Size: Makes about 3 1/2 cups
