Ingredients

    4 medium beets boiled, chopped
    5 medium carrots, peeled, chopped
    1 onion, peeled and quartered
    1 carton chicken broth
    2 cloves of garlic,whole
    1 tbsp curry powder (optional)
    salt and pepper to taste

Directions

put all ingredients in crockpot for 8 - 10 hours on low. when finished cooking, use immersion blender to blend (or put all soup in blender). At salt and pepper after blending.

Serving Size: makes 10 1-cup servings
