Number of Servings: 6


    2 TBS oat bran
    2 eggs
    1 tsp baking powder
    2 tsp splenda
    5 TBS banana yogurt
    1 tsp cinnamon (optional)
    1 tsp vanilla
    1 tsp banana extract


I use 2 TBS oat bran so I can eat all 6 of the muffins throughout the day and still be in my allowance. Feel free to adjust to your liking. You can use 12 TBS bran and only eat 1 muffin a day if so desired. Also substitute out the yogurt and extract to make other flavors. Ie: coconut, lemon, srawberry, blueberry, almond. Make it your own! Enjoy!


Beat eggs with whisk and add yogurt until creamy. Add dry ingrediednt to egg mix and blend well. Add vanilla and banana extract. Divide equally between muffin cups that have been sprayed and wiped with olive oil. Bake 25-30 minutes.
