Introduction

Found this recipe from Carole Reu on Food.com, and made some adjustments. It called for Bisquick and I had just made a batch of this Homemade Multi-Purpose Baking mix on Sparkpeople. Its made with half whole wheat and half white flour. My husband never gets excited about anything I bake, But he did try one of these last night and demanded that I put 2 in with his lunch today. Ingredients

    2 Cups Bisquick or Sparkpeople mix
    2 teaspoons of Cinnamon
    1/8 to 1/4 Cup Sugar Blend ( Truvia or Splenda )
    3/4 to 1 Cup of Apple's peeled, corded and finely diced
    2 Egg white's
    2/3 Cup skim milk

Just do a search on the sprkpeople recipe database for the 'Homemade Multi-Purpose Baking Mix". I believe it is one of Chef Meg's recipe's.


Directions

Preheat oven to 400 degrees
Spray muffin tin with non stick cooking spray.

Mix all dry ingredients, Add the apples and stir. Pour in milk and egg white's. Mix all together being careful not to over mix. Divide evenly into all muffin cups, and bake for 17-19 mins. Until tooth pick comes out clean. I've noticed that if I add to many apples and if I not remove the muffin's from the tin's right away the bottom's could be kind of soggy. I shut my oven off. put my muffin's on a cooling rack and return to the oven for 3-4 mins. This helps get rid of the problem.
